Pesto Encrusted Boneless Leg of Lamb

Let sit covered in the pesto, at room temperature, for 1 hour
Boneless leg of lamb is a great family or dinner party main anytime of the year...not just at Easter!

Today we will take a look at one of my favourite ways of preparing it -- by covering it in pesto and roasting it at two different temperatures. The method works for any size leg, though the one pictured here was 3 1/2 pounds (so a somewhat smaller one). What I particularly like about this method is that it creates a nice "crust" on the lamb and also results in there being different levels of cooking within the roast so it can cater to more tastes.

First, take out your leg of lamb and cover it in the pesto (you can make your own or use a pre-made). Cover and let sit a room temperature (not in the fridge) for an hour. Boneless legs usually come in a string mesh. Keep this in place during cooking and until carving.

Preheat your oven to 450 degrees.

After cooking, let rest at room temperature for 30-45 minutes
Place the lamb on a roasting pan with a rack (this works better than on a flat pan) and roast on the middle rack for 15 minutes.

After 15 minutes, reduce the temperature to 350 and roast until it reaches your preferred level of "doneness".

I like it rare, though most people like medium-rare or medium. As always, if you must cook it well-done, I don't want to hear about it!

The best way to gauge this is using a cooking thermometer of whatever type you own (the best are those where you do not have to open the oven).  For rare you want to remove the lamb when it is at around 120, for medium rare 125 and for medium 130.  This will take (not including the first 15 minutes of high heat roasting) around 10-13 minutes a lb for rare, 13-17 for medium rare and 17-20 for medium -- but really, using a thermometer takes out the guesswork.

It is a beautiful thing!
When done let the leg of lamb rest at room temperature before cutting for between 30 and 45 minutes depending on the size of the roast.

This pairs very well with rice, a nice pasta salad, mint sauce and, of course, a good bottle of red wine.

Enjoy!

Oxbow House Cookery Book 1977 with Fish Pie & Hockey Night Meatballs - Vintage Cookbook TBT

Vintage Cookbook: The Oxbow House Cookery Book, Constance Crossley
Publication Details: Self Published, 1977

Published in 1977, the Oxbow House Cookery Book is a really perfect example of the wonderful community cookbooks that groups or individuals put together to raise money or bring people together. These were genuine labours of love, and this one is full of charm, folksy wisdom and some really great recipes.

Done of a specific style, the cookbook is entirely handwritten, and then printed from this state. It is also illustrated throughout with pages of black and white drawings of buildings, nature scenes, fishing boats and the like, as well as reprints of historic clippings.

My copy is also inscribed in the front by Constance Crossley, the cookbook's author, and notes that it was published October 21, 1977 at a reception at Oxbow House, which apparently was a rustic centre and studio in Mississauga. Constance writes that the Premier of Ontario, Bill Davis at the time, sent two telegrams of good wishes and congratulations!

Today we are including two recipes, exactly as originally presented, that reflect the overall tone, including the marvellously named Hockey Night Meatballs!

Fish Pie

25 ml butter (1 oz.)
25 ml flour (1 oz.)
250 ml milk (1 cup)
50 ml peeled shrimp or prawns
1/2 kilo cooked flaked haddock or cod
1/2 kilo cooked mashed or sliced potatoes
grated cheese and salt and pepper

Melt butter in saucepan, add flour, cook for 2 minutes. Gradually add milk, bring to boil stirring constantly for 2 minutes with reduced heat.
Add the shrimp, flaked fish, seasoning and mix well. Put into a greased ovenproof dish, cover with potatoes, then sprinkle with cheese.
Bake at 450 degrees for 20-25 minutes
Serve very hot with perhaps a side salad and upside down cake for dessert.

Hockey Night Meatballs

500 ml ground chuck (1 lb.)
5 ml salt (1 tsp)
125 ml otameal

Mix with hands and shape into balls.
Put into a little heated oil in a skillet and brown all over.

Sauce:
250 ml chili or catsup (1 cup)
125 ml vinegar (1/2 cup)
30 ml Worcestershire Sauce (2 ts)
10 ml mustard (2 tsp)
10 ml chili powder
2 ml garlic salt
30 ml green pepper, chopped

Combine and bring to a boil
Add 250 ml pineapple chunks drained. Cook for further 20 minutes along with the meatballs.
Serve with noodles, French bread and red wine.

Tuna Almondine: Behold the greatness!

There can be little doubt that this will steal the show at your next shindig!

Looks...ummm....delicious!

Anti-choice extremists target Trudeau and women's reproductive rights

Warning: While necessary to the content of the piece, this post contains some disturbing and very graphic images.

The extremist anti-abortion group, the Canadian Centre for Bio-Ethical Reform, (CCBR) has been distributing leaflets and demonstrating around Toronto lately. Recently they targeted my west Toronto neighbourhood of South Etobicoke both distributing their leaflets door-to-door and demonstrating at a local intersection as well as, disgracefully given the imagery they use, outside of a local high school.

Their leaflets are grotesque and profoundly misrepresent abortion in Canada, a point to which we will return. They also specifically target Liberal leader Justin Trudeau -- and it is no coincidence that they are being sent out in a riding that is held by a Conservative but that has more often gone Liberal in the past few elections both provincially and federally.

Justin Trudeau, in one of his finer moments as Liberal leader, made the party explicitly and unequivocally pro-choice. In 2014 he stated:

“I have made it clear that future candidates need to be completely understanding that they will be expected to vote pro-choice on any bills,” Mr. Trudeau said Wednesday, a day before a major anti-abortion rally is set to take place on Parliament Hill. “… For me, it’s a debate that has been settled for the vast majority of Canadians and we don’t need to reopen that issue."

Prior to this the party had allowed anti-choice votes by members of its caucus -- members such as anti-LGBT equality rights and former Liberal MP Jim Karygiannis who has, unfortunately, gone on to become a Toronto City Councillor.

Obviously this has greatly angered the anti-choice movement as it left only one major party in parliament where caucus members were allowed to oppose women's reproductive rights, the Conservative Party (and government). (The NDP has been explicitly pro-choice for many years now.)

In the leaflet, reproduced here, Justin Trudeau is literally portrayed as having blood on his shirt and collar. This is done next to an alleged image of an aborted fetus and above the slogan "Justin Trudeau Supports Abortion Until Birth".

The leaflet states that "Abortions can happen in Canada until birth - and nearly 100,000 abortions happen every year". It later states "A vote for Justin Trudeau is a vote for this" next to a highly dubious image of an alleged aborted (and supposedly disemboweled and beheaded) 20-week old fetus.

To call this framing of abortion in Canada profoundly misleading would be an understatement.

As the University of Ottawa notes:
Over 90% of abortions in Canada are done in the first trimester; only 2-3% are done after 16 weeks, and no doctor performs abortions past 20 or 21 weeks unless there are compelling health or genetic reasons. The risk of maternal mortality is probably greater in carrying a pregnancy to term (7.06 per 100 000 live births) than the risk associated with abortion (0.56 per 100 000 terminations)
To make this perfectly clear, "20 weeks is the cutoff for elective abortions according to the Canadian Medical Association" which means that any performed after this point are only done where the health of the mother is at risk or where the fetus is no longer viable or will not survive for any meaningful length of time after birth. The notion that abortions "can happen in Canada until birth" is simply false unless one is including abortions that are an established medical necessity.

Further, the overwhelming percentage of abortions in Canada occur prior to 16 weeks, with the greatest percentage of those occurring prior to 12 weeks. Only 3.3% occur between 17-20 weeks while only 1.9% occur after that -- all of which would have been non-elective.

This disgraceful imagery, which, even if real, attempts to shock with medical photographs that are completely de-contextualized (virtually any medical procedure could similarly be made to look shocking and disturbing presented a certain way) is also used by the group on the protest signs they carry at their demonstrations, including the ones outside of schools.

While I suspect that these tactics will backfire, they still need to be roundly condemned and so should the targeting of Justin Trudeau.

In ridings where there is a Conservative incumbent, such as mine (Bernard Trottier), the MP should be contacted and asked to state publicly where they stand on the leaflets and women's reproductive rights.

The attack on Trudeau should also be forcefully condemned by New Democrats and leftists generally. Against them specifically he deserves our full support. While, especially with an election on the way, it is fashionable in some quarters to claim that the Liberals and Tories are the "same", on the fundamentally important issue of full and unequivocal support for women's reproductive rights and freedoms they are not.

These rights and freedoms are under constant attack across North America and there are outright opponents of them within the government caucus. Attempts to limit or in any way hinder access to abortion also, as the Critical Social Work Journal noted "most drastically affect marginalized women, “particularly those who are low-income, women-of-colour, immigrant or refugee women and those who do not speak English or French”"

The issue is not a peripheral one. It remains a critical battleground in the fight for women's rights and social justice and equality.

Opponents of these rights will stoop to any low to try to undermine them. We cannot allow them to succeed.

UPDATE (06/06/15): A local City Councillor, Mark Grimes, released a statement regarding the material being in distributed in South Etobicoke, among other places. In the statement Grimes notes that there is little that he can do as a Councillor and that the police have informed him that the leaflets do not constitute, hate speech, which they do not.

People who are opposed to these grotesque leaflets should express this by protesting them to their local Conservative MP and by calling on elected officials from all parties to publicly condemn them as both profoundly misleading and as a truly sickening attack on Justin Trudeau.

While the leaflets are disgusting, Mr. Grimes is correct that they are not illegal and they need to be opposed politically through political action, not legally.

Update July 31, 2015: This disgusting campaign has been expanded nation-wide. Media reports are coming in that they are being delivered coast-to-coast in certain swing ridings in  the following misleading envelope:

Harlequin exposes the real passion in Toronto's politics!

Rob Ford's tenure aside, Toronto politics has been a largely tepid affair that, while important, has rarely brought the idea of deep, unbridled, unrequited passion to mind.

Never fear though -- Harlequin Romances set the record straight in the 1980's with this torrid tale of a lust and longing that could derail the administration of a Firebrand progressive with a true civic vision no less!

You will never see City Council the same way again.

May: Bill C-51, the "Men's Rights Movement", taxes & more -- The month on The Left Chapter in review

From: Tom Mulcair, the NDP & Bill C-51: Committed to a full repeal!
May was another busy month with 40 posts of various kinds on The Left Chapter.

Here are the top five posts, in terms of hits, for the month of May. For the first time so far, it includes a tie with two posts having an exactly equal number of hits as of 2 p.m. today. There was also an unusual circumstance, where one post from March would have made the top five, so we have included a link to it as well!

1) Tom Mulcair, the NDP & Bill C-51: Committed to a full repeal!

To date the story of Bill C-51 and the NDP has been one of somewhat contradictory messaging around the issue of whether or not, if elected, they would amend the bill or repeal it entirely. While some MPs said one thing to the party faithful in a variety of contexts, the leader of the party said something quite different on Global Television and these contradictions were never, until yesterday, publicly reconciled.

2) Dan Perrins, CAFE & Canada's Men's Rights movement

A sticker has been appearing on lampposts and mailboxes in my west-end Toronto neighbourhood of Etobicoke (and, presumably, in other neighbourhoods as well). On it a website called antimisandry.com is listed below the claim that "Almost 80% of all suicides are men" and above the slogan "Men Matter".

3) Trudeau outmaneuvers Mulcair on taxing the wealthy

Back when Linda McQuaig was running for the NDP in a federal by-election, NDP leader Tom Mulcair could not have been more clear that he opposed personal tax increases of any kind and on anyone -- from me to Conrad Black and all points in between!

4) "Men's Rights" group CAFE is trying to march in Pride Toronto: You can help stop them!

The Canadian Association for Equality (CAFE), Canada's most prominent "men's rights" group is trying, again, to march in Toronto's annual Pride parade.

5) Tie: Love in the time of Bill C-51 Submitted by Aidan Monis

Last night, as part of our weekly tradition, my Dad and I yelled at each other about politics. The topic at hand was Bill C-51, the recent legislation put forward by Stephen Harper in an effort to “combat terrorism,” which you surely recognize as a euphemism for “destroying freedom of expression and human dignity.” Canadians of all political stripes (including many with whom I mightily disagree on other issues) have expressed their intense distaste for the bill. The arguments for opposing the bill have been well-documented elsewhere, so I won’t really speak here about the nuts and bolts of C-51. In the spirit of the oh-so-clever title of this piece, I would rather say a few words about its emotional impact.

5) Tie: Update: The NDP and Bill C-51 -- Amend or repeal?

So after an epic period of rhetorical equivocation it does appear that the NDP understands, despite some odd claims to the contrary, that there is actually a difference between amending Bill C-51 and repealing it.

Although it was written and posted in March, the piece Is NDP MP Randall Garrison right that Tom Mulcair will repeal Bill C-51? suddenly began getting a high enough number of hits that it would have been the second place piece overall this month had it been written in May! This stopped as soon as Tom Mulcair announced that the NDP would, indeed, repeal the bill.

The top food blog for the month was Natalie Lochwin's uncovering of Stephen Harper's Mom's Bran Muffin Recipe from 1979.
